I use Green Board and Modern pieces in game, and use Marble Green board and Modern pieces for game analysis
Dark Wood board and 3D Staunton Pieces. I like it because it looks most like a real set. The Burled Wood board is too distracting.

They must be a guy question. A girl would know that you have to color coordinate, your purse, hat, shoes . . . etc . . . with your dress.
It depends on what set you use!
If your set is wood, use a wooden board with similar color. If your set is plastic figurine, use matching colors.
