I have my own thoughts on the subject but would like to hear others out to start, as I don't want the 1st post to be a wall of text.

actually, jedi are permittted to use force crush, just not on a living being

it is forbidden to crush a human being with force crush and can lead to serious consequences, but practicing this force ability on droids is perfectly acceptable

Very True, But when I watch this scene, I feel a very cold and distant Luke Skywalker who is taking any chance he can get to expel his anger. I would like to point out that Mando is set 5 years after Return of the Jedi when Luke did this.....

Maybe these things are 'Allowed', but one thing is for sure, It's a Dark Path.

he riminds me of mace windu, he uses force abilities that can lead to the dark side, but he ultimately doesn't go down that path

In the Mandalorian, he uses it on droids, which is not Dark Sided.

In Return of the Jedi, he does use Force Crush on the Gamorrean, and this was done to show that there was a very real possibility of Luke falling to the Dark Side, and in particular it draws a parallel between Darth Vader and his son as this is a power we often see Vader use. The fact Luke dresses in black in Return of the Jedi also serves that purpose of showing Luke is very susceptible to falling to the Dark Side and there is a big risk of that happening
