The current gold standard for one volume opening books seems to be FCO by Paul van der Sterren (Fundamental Chess Openings). He rarely goes deeper than 8 to 10 moves deep in a lot of the variations, but is willing to devote a paragraph or so in explaining most moves. I'm sure you'll get other recommendations as well.

Hi guys,
I'm an up and coming player with a rating of only 1122, but I am doing well lately and winning games against many 1600-1700 players.
I play alot of French defence - tarrasch, exchange and classical as well as the kigns gambit.
I'd like to brush up on my opening theory - but I struggle with online material, I learn better from a book.
I'm wondering if there is a good chess opening theory book you could recommend?
It is ok if it is theory heavy - or dry reading. I just need one that goes through different variations of many different openings :)
