You're going to get the, 'study tactics' lecture again and again, you know that, right?
Of all the strategy books for someone 1200, what would you recommend?

there's only one strategy - get to your opponent's king before he gets to yours!
actually checking through the some top GM's games whose openings match yours may help. e.g. if you like to play the King's Indian Defence as black then you m8 be able to learn strategies from radjabov's games.

I'll work both sides of the street. With out tactics there is no strategy. I recommend "The Complete Idiot's Guide to Chess". Please don't be put off by the name. It is highly rated in Amazon.com and supported by 58 reviews that you might find interesting. It has tactics, strategy, endgames, middle games, openings, and many other interesting things like exercises at the end of many chapters and the "info" on chess computers and the chess community.

Go out and buy chessmaster, do all of Josh Waitzkin's "Chess Academy" lectures and watch your rating go up 200 points.
I have lots of great tactic books and am really getting into them. But I keep saying I need a good book on strategy. But most of them are too hard for someone like me who is under 1200.
I own three: Seirawan's Strategies, Pandolfini's Weapons of Chess, and Silman's The Complete Book of Chess Strategy. (The last two are just chapters on various subjects. Not bad, but not quite what I am looking for.)
What I want, and maybe Seirawan is fine for this, is a book that walks me into planning and strategy step by step - if that is possible. One that starts off at the beginning and progresses as the student does.
Is there such a book? If so, please tell me what it is. I don't want a book that is so far over my head I have to struggle page by page. I want one I can enjoy as I work through it.
(I know - I'm always asking about strategy books.
