I don't have Windows 8. (Nor do I want it, from what I've read about it.) However, I don't know what you mean when you say you have to "go through all of these really confusing files and documents."
You just need to download the file and note where (the folder) the file is being saved on your hard drive. After it's downloaded if you don't know where it is, you could always do a search for it, assuming you know how to search for files with Windows 8.
If you downloaded it and you don't know where it is or how to search for it, you need to take a class or spend some time learning to use use your operating system.

Aren't you supposed to download something else to make it work? Why no have it all come together with one single download?

Stockfish DD is probably stronger, marginally, since it came out after Stockfish 4.
The lastest development versions are stronger than 4 or DD.

No it isn't. You download GUI, install it, and load engine into it, somewhere in settings.
You may also want to download opening book and endgame tables

I believe that there should be a help file in Arena, explaining everything, though it's very intuitive.

I downloaded stockfish for Windows 7 but I found it too complicated so I gave up after about two hours trying to get it to work. I ended up downloading Houdini. Although it did set me back a few dollars I found it easier to install and use than Stockfish.

Looks like ad, because any engine is used in exactly same way.
That's sort of what I thought too, unless he tried to run Stockfish without a GUI, then bought a Houdini engine-GUI combo and doesn't understand the difference between the two.

Keep it simple, download Lucas Chess. Its a free gui that already contains stockfish and an opening book. It also contains 20 other chess engines in case you want to try some of the others as well.

I don't know if it's necessary (I think it comes with Stockfish 8 32 Bit), but Stockfish 8 64 Bit (legally free), the engine itself, is here: https://stockfishchess.org/download/
You can save it in a folder and go to Tools/Engines/External Engines to add it to Lucas Chess's list.
For smartphones, look for "Droidfish" in Google Play, etc. to get Stockfish 8 in what most of us think is the best chess app. Also, there's Chess by cvncs at Google Play -I don't know if there's an Apple version- that has 38,000 chess problems/puzzles in various grades of difficulty and also will let two people play each other by Bluetooth, WiFi, or Online.
