What are the quintessential recommended chess books for intermediate players?

I'm not sure what you mean by intermediate. But I will say this. 6 years ago, I was stuck at the 1000-1100 mark (for about 4 years). I picked up two books and carefully studied them. "The Amatuer's Mind" and "How to Reasses Your Chess." Within a year, I went from 1000-1100 to 1700. 1700 is probably still intermediate level, but it will definitely help any intermediate player.

I'd also rec playing through many of the Zagreb '59 games by Bronstein. I've also heard the MacDonald book is very good.

as noted, it's all about the work. Owning 50 books won't make you a better player I assure you.
