I would say ChessX. Especially the Macintosh Version, although the PC version is pretty also.

In my opinion, scid interface is great. I love the "import pgn game from clipboard" feature.

I don't like SCID. I hate any interface which won't let me make the board the size I want and forces me to use a little board. Giving you only a handful of fixed sizes should have gone away with MS-DOS.

I just resize the window to change the board size.

I get that with crafty, it tells me the board position is illegal all the time, I just gave up on it.

I'm not sure what you mean by 'beautiful'. Beauty is in the eye of the beholder.

I want a GUI to be functional. Long ago I installed Fritz 8. It was not user friendly and was buggy as well. Now I use Shredder 12. It is straightforward and works. I don't give two figs as to whether it appeals to an "Art Fart".

What's the software that KebuChess / Dereque Kelly uses for his opening tutorials on YouTube? The board and arrows are quite aesthetically pleasing to an "Art Fart" like myself.

In Scid vs. PC, the shortcut to increase the size of the board is CTRL + mouse wheel up.  To decrease it, CTRL + mouse wheel down. 

I counted 11 different board sizes available from "way too small for me" to "very, very large."

All the SCID boards are much too small for me. The largest size only uses slightly over half of my monitor height.

Interesting.  However, are you using Scid (which is no longer supported) or the improved fork, Scid Vs. PC?  With Scid vs. PC, the largest size takes up nearly my entire screen.  (And I have a very large screen.)
