Yeah it would be nice if all 35 of the "tournament" openings mentioned in the intermediate study plans had courses. Luckily for you though there are two killer video series on the French that will have to do in the meantime. GM Simon Williams just did one recently and WGM Tatev Abrahamyan has an even more comprehensive series. You probably already knew that. 
French Defense

The courses on the KID and the sicilian have raised my rating from 1810 to 1942 in a quick span of time. I would love there to be a course on the french defense. Also, I would like courses that go over key motifs of the middle game such as the minority attack, botvinnik's pawn center, or various other positional techniques.
