If you like piece activity, you might try the Scandinavian defense. It can transpose into the Caro-Kann if white tries to play the Blackmar Diemer gambit (1. e4 d5 2. d4 c6). I played the Caro-Kann as my main defense to e4 for a while, but often found myself a bit cramped and didn't really like the positions a lot. In my experience, the Scandinavian lets black have a bit more room to breathe, and is more enjoyable to play. The Qa5 line is solid, and the Nf6 lines offer a lot of options without needing a lot of memorization. Of course, I'm a pretty poor player, so take this with a more than a few grains of salt.
Caro-Kann?

I like the Caro-Kann, but I am a horrible endgame player. If you have good endgame skills, I strongly recommend the Caro-Kann. You can memorize the main variations in the opening, defend in the middlegame, then go into a winning endgame. (In theory, anyway )
