GMGinger is quite flashy for a GM.  

Perhaps a little too flashy, and some of his recommendations have been called suspect even for lower levels.

I love GingerGM. His book and Chessable course on the Classical Dutch are excellent (especially the work he's done on the mainline as he himself has beaten strong grandmasters with it).

I don't think that you should be relying on traps though. It's good to know about them so that you don't fall into them, but very often setting a trap will involve making a suboptimal move (thus resulting in a bad position if your opponent doesn't fall for it). In your video, you're basically recommending that White play the Korchnoi Attack which will result in Black getting an edge and strong grip on the centre if they respond to 3. g4 with 3. ... d5. This is not a good way to play against strong opponents unless you are familiar with what White should do next (and even then, White's win-rate here is not great, in fact, Black wins more games than White here!).

Yes but then if they go d5 you just follow up with c4. I’m not saying always rely on traps obviously, but for people that don’t know these lines it can be useful. I didn’t actually know this line until Simon showed me it. I usually play the Jobava London against the Dutch defence which is pretty effective. I’ll be doing a vid on this soon.

After c4, Black can safely take the pawn while also possibly developing a piece with fxg4 hxg4 Bxg4. Qd3 now carries less bite since the Black king now has an escape square on d7. This is a rare position, but I personally would not want to play this as White.
