Symmetrical pawn thrusts tend to produce closed games, or provoke the attacking side to force an imbalance. So I'd go with 1.e4 e5, 1.d4 d5, 1.c4 c5, etc. as the best defensive openings.

Yes, try the Stonewall variation. It is simple, has pretty much no theory, and is solid and fun to play with good attacking chances.

The Dutch is fun against 1.d4. I play the Leningrad Dutch, not the Stonewall, but both are very interesting and promise a dynamic game for Black. Against 1.Nf3? I usually don't play against that, but Nf6 or d5 are good bets.
