The most important pawn structures come after 1.e4 e5 and 1.d4 d5. But it is not possible to cover all important structures in a small repertoire. For instance 1.e4 e6 2.d4 d5 3.e5 is another important structure. So is Stonewall, etc.
Design an opening repertoire to include all pawn structures

There are 5 main types of pawn structures/centers:
1) The Closed Center - Multiple files are completely blocked and play typically occurs on the wings. Openings that most often lead to this: Advance French, Winawer French, Classical King's Indian, Hubner Variation of the Nimzo-Indian.
2) The Mobile Center - One side is given the big Center with mobility (i.e. Not the classical KID or Benoni) where the opposing side tries to prove over-extension. Openings that most often lead to this are the Grunfeld and Alekhine
3) Static Center - A single file is completely blocked but no fully open files. Exchange QGA, Exchange Caro, etc.
4) Open Center - At least one file is fully open. The IQP Center is a special case. Exchange French, Petroff, Main Line of the Nimzo-Indian, French Open Tarrasch with 4...exd5
5) The Amorphous Center - basically everything that does not fit in the first 4. Najdorf, Saemisch KID, etc.
My repertoire is specifically geared around avoiding number 2 from either side!

That's a good idea.
Though, if your goal is to become versatile and to expand your knowledge, then you'll also want to adopt multiple defenses for the Black pieces, as well.
I'd start with a few - ideally ones that have completely different structures from each other.
e5 and Sicilian against e4, perhaps.
KID and QGD against d4, perhaps.
Alternate between them here and there, so that you continue to learn from each of them.
Or something along those lines. Later on, you expand your repertoire to include even more ...

It's rather old and, I suspect, only available in Descriptive Notation. Mentioned purely 'for what it's worth'.

Yeah, I think it’s hard to make repertoire with all the different pawn structures.
I feel like there is a lot.
Some overlap, but some are like so different from each other.

You can't cover all of them in any small repertoire. Better to choose a subset of structures you want to work on for a period and work with that.
Not that even GMs tend to specialise in certain structures. Eg MVL played the Najdorf and Grunfeld as black. Fischer was similar, playing 1. e4, Najdorf and Grunfeld/KID for most of his games up to the Spassky World Championship match (at which he played several games in openings he had never played before).
The book "Chess Structures" by a south american GM is considered gold standard here.
I have came to know about pawn structures in chess and honestly knowing about pawn structures has a great impact on me, it's like unlocking a new weapon in a game.
Now in order to discover all the pawn structures I decided to design a repertoire which includes all of them.
What openings can I play to get all of them?
I cannot change openings all at once but I will tackle them one by one.
It's I think gonna be e4 e5 for black to get all the e4 mainline structures, I will stick to e4 as white in order to get all Sicilian structures as well. What about d4? Nimzo?
