easiest/best openings for beginners?

It's not really necessary for you to study openings in any detail. At the moment you win and lose because of blunders and losing material on either side, not because you or your opponent gain a slight edge in an Italian game. Just try to do the basic fundamentals of opening play and this will get you to decent positions out of the opening:
Fight for control of the centre.
Develop knights and bishops to their most active squares.
Castle your king.
Don't waste time with early queen moves.
Don't waste time moving flank pawns.
Don't waste time moving the same piece twice for no reason.
Think of it like a race. You want to get all of your stuff into the game before your opponent. Then it's about not losing pieces for nothing. Until you can play game after game without blundering badly everything else is largely irrelevant.

As black, if white plays e4 play e5. If they play d4 play d5, and develop normally and castle.
At lower levels the main cause of losing is hanging pieces and dumb traps that lower rated players love to play. If you lose quickly to a trap, analyze the game and see where you went wrong. If you lose because you hung a piece, well, don’t do that! 😊

Well, if you are totally new to chess then I recommend you to learn aggressive openings. I can strongly recommend to go for e4 and learn the art of attacking from it. Also I strongly recommend to work on tactics and classics.,
Now let's talk about openings which you gonna face against e4.
1. Sicilian Defense: The most aggressive opening and bothersome for white players.
2. Caro Kann: Super solid but still you can do super well if you know the exchange variation well.
3. Pirc and Modern: Against both you can prepare simply Grand Prix Setup.
4. Against french I suggest to play e4 e6 d4 d5 Bd3!? . In my practice this move gives a lot issues to black players.

For your rating range, I'd say just learn the basic theory of the most common openings (Scotch, Italian, Ruy Lopez), then specialize in a less common opening that will throw your opponents off. I wouldn't recommend anything too complicated, like the Sicilian, because there are too many variations and lines you'd have to learn.

I'd say definitely scotch game. It's pretty simple and fun to play. I played it often when I was lower rated.

scotch, italian, ruy lopez, 4 knights as white,
scicilian, french, and how to counter the above openings as black
Just try to improve your pieces while keeping an eye on your opponent's threats. All openings end, so eventually you will need to do this anyhow.

Play classical openings, as they are founded by proper opening principles
Ruy Lopez, Queens Gambit, Queens Gambit Declined, Italian (Proper c3, d3/d4 set-ups, not gambits) Catalan, Open Games, French Defense, Sicilian Defense, etc.

Birds eye opening, I am climbing the ratings with it breaking 1100 rapid (I started playing it again, I get like +3, 4 minute advantage in time in rapid cuz the people don't know how to use time; probably cuz I played blitz a lot; not that I really use that since the game is decided well before mostly but). I am also trying out the dutch defense and sicilian defense & the english. I really like c and f pawns. EVER WONDER? My c or f pawn is stuck behind the horsey, its useful for that plus its a bit differ.
Not the best play, but I got a decent position outta the opening. I am black.
The power of the bird; I *Blundered the horse in the endgame, but I would get 2 passed pawns so it's not too bad; I got a little anxious*
