instead of 2... Nf6, why not Nc6 thus protecting blacks pawn from capture? and thus halting the queen snatch plan before it even gets hatched.

Ok, the diagrams above have nothing to do with the 4 knights. They just show the (very badly played at that) Petroff defence. They are completely off topic and frankly i dont know what glammonkey wants to point out.
Now, about the 4 knights (1.e4 - e5, 2.Nf3 - Nc6, 3.Nc3 - Nf6) it is actually a lot easier for black to avoid it than for white to get into it. E.g. To get to 4 knights black has got to play 3...-Nf6. If black doesnt want to get in 4 knights then play something else.
(3...- Bc5 is an option although you do give white the option to play 4.Nxe5 - and before you ask, no! nobody looses material)
(3...- g6 is another more modern option, equally good)
(3...- d6 also, but a bit passive)
There are plenty options. If you are black and you dont want to play 4 knights you dont have to. Its that simple.
