Try the King's Gambit, evans gambit, fried liver, or the dragon variation of the sicilian. Those or all excellent attacking openings. Check out Morphy, Anderssen, Steintiz, and other "romantic" era chess players, because they always prefer to gambit and sacrifice more than modern ones do.

And if you are talking about sacrificing and gambits then just every time you happen to see one is a possibility-then play it. As many different types as you even think might remotely work. After trying many out you will start to see some basic patterns, what works and what doesn't and your creativity will increase as well(once you sacrifice you are, in most cases forced to play in a certain way for the rest of the game).
