what e5? there is no white e5 opening.
Pawn E5 Open
I think he meant e4. If you're new, e5 would probably be the easiest response, perhaps the Ruy Lopez, as it's pretty well known. I usually play the Sicilian or the Caro-Kann, depending on which opening I feel like that day. If you're new, and play lower ranked people, the actual opening won't matter much, as neither of you will stay book for more than a move or two, so just worry more about developing your pieces, trying to get control of the center, and not opening glaring weaknesses into your pieces.

I'd recommend Lasker's Manual of Chessif you are a complete beginner. Get some principles and ideas, let the openings come later. A specific response to 1. e4 will depend on many things but generally 1....e5 will be best. If you want a simple basic repertoire while learning First Chess Openings by Eric Schiller (FM_Eric_Schiller), a member here is interesting.

I play c5 (sicilian) but it is not an easy opening. When you are new with chess play moves like e5, Nf3, Nc3, Bf5 (or g4, e6, d7), Bc5 (or b5, d6, e7), 0-0. And for example Qd7, now your king is "safe" you have some pawns in the center and your pieces are in the game. Dont spend to much time at your opening when you begin to play chess. The middle game is the most important in game, for sure at your level.

b4? well that does change a few things. I'd still stick with Lasker. Play solid, developing moves, control the center, etc. Equalize, slowly accumulate advantages, then strike. DO NOT try to punish white for his unorthodox start immediately. It's what he wants and the only reason b4 sometimes does well.
What's a good defence for a pawn E5 open. Im really new to chess and have only been playing a few days and someone used that and caught me off guard big time =P Any advice on a good open to it?
