Why are so many Grandmasters just learning openings?

As I'm still kind of a new chess player, I'm still learning some openings, and deciding which I like the best. So far, I'm pretty sure I like the basic Ruy Lopez, with the white bishop to B5. Unfortunately, my chess club is full of idiots who know no openings, and my teacher's no genius either. So, what are your usual reactions as black to the Ruy Lopez? Is there any really good continuations I should try? Please post a diagram if you have time.
