What are you playing on move 2? Because normally it goes 1.e4 c5 2.Nf3 so if black now plays e5 you can capture Nxe5.

That's what I'm asking:
If there are any good suggestions against e5 during move 2 (either I block it or not)
or any good traps against e5 if I don't stop it from happening

If it goes 1.e4 c5 2.Nf3 e5 then just capture the pawn 3.Nxe5. Winning a pawn for nothing is obviously a good move.
If it goes 1.e4 c5 then what do you normally play here on move 2?

I try to be diverse and challenge myself, since I don't know any good moves except taking his pawn on e5. If there are traps to e5 then I might go into it.

Play 2. Nf3 if you want to stop e5. I would recommend playing into the open sicilian from here with 3. d4, but the game can get very complex very quickly- there's genuinely just way too many options for me to reasonably talk about.
If you do prefer some anti-sicilian that allows e5, like the alapin for example with 2. c3, then you can try to play around the weakness they create on the d5 square, though this may be very difficult to understand how to do properly at your rating since its a more positional idea, but I don't think there are any immediate tactical ways to punish this move.
If black is going to play 2...e5 no matter what, then you could try the Bowdler.

"If" Black is going to play 2... e5, but the Bowdler is poor against pretty much anything else. The best bet you have is to try and transpose to main lines after e6.

I've been playing a couple of games where my opponent, as black, plays the Sicilian Defense, and on the second move they strike e5. What would be the best counter to this version of the Sicilian? or traps? (assuming that I have a choice of moves as white on the second move, assuming black plays e5 anyways, unless I prevent it)
