Sicilian Defense: unusual variations?

Hi!

Hello there. I'm playing this game against a new player who hasn't played any other game in this website. So he's obviously unrated (as I am at this moment). But he seems to know something about chess (I mean, he's not a complete begginer like I am)

Do you have any suggestions on variatons of the Sicilian Opening that are both playable and unusual as to see if he knows complicated lines or is just playing the main line?

I'd like to get him off-guard and assess his ability.

Would you do that, or would you play the mainline and see if he is the one that plays an uncommon variation?

I am pretty sure that you are not aloud to receive help on a game that you are playing currently , so while you check up on that i will post the best line for white in this variation in white text. If you are aloud to get help high light text below

1. e4 c5 2.nf3 nc6 3.nc3 g6 4.d5 cxd4 5.nxd4 bg7 6.be3 nf6 7.be2 0-0

That's an older form? I guess I should look at newer theory since that is the move order I learned.
