As magnus said, vienna game and gambit give crazy win rates. If they don’t play e5 go for exchange variations, don’t bother too much.
Other openings i recommend are the french defence and QGD as black.

looking at 400-1000 stats, scotch gambit for white with 53% wins and just 44% losses in 9.6m games
actually queen's gambit is stronger at 57:40 in 412k games
and white does well in the sidelines too
as black, the west indian defense (I would think simply playing king's indian against EVERYTHING could be a good way to learn chess and the complicated theory to really master the KIA/KID system, but it's definitely best against queen's gambit
against 1.e4, it's a statistical tossup between the sicilian (with franco ...e6) and the carokann, but I would think the caro is better for a beginner for being more solid and less theoretical than the sicilian, and the Botvinnik-Carls Defense has 3% better winning stats than white on just move #3
