You take the b-pawn on move 2 and after they take your pawn you just play Nf6. The idea is that you're going to get to hit his bishop with Nc6, then you can just play d5 and castle and go from there. White loses a bit of time and has a weak pawn on a3, in return he has two center pawns to your one and a nice bishop on the long diagonal.
What should I do against the Polish/Orangutan

1.e5 2.bxb4 play nf6 0-0 and aim for d5 and c5 (they usually more prepared for d5 nc6 since the extra tempi is tempting, but c5 is the bigger threat)
white is fine...if they know what they doing. They often dont.
