Classical Sicilian for Club players is a good introduction to Sicilian theory. It includes typical ideas of the Sicilian. Plus there is only one challenging variation (6. Bg5) in other variations Black gets a relatively comfortable game ( Not winning or slightly better, but a comfortable position for a club player to handle).
You can research about the opening more on the Internet although there are relatively less Videos or material on it. So, better would be to study Games of GM's to get the feel for the position.
Bonus tip if you're new to Sicilian, Bowlder attack(A suspicious sideline against the Sicilian) is a pain and a lot of players play it. You need to know what to do against it and really be happy when opponent plays it.
"most principled" would likely be tactics rich dragon or Najdorf. Easiest entry would likely be 4 knights Sicilian which leads to French - esque positions. I like above suggestion of classical--it's a fighting game with plans as well as tactics. Somehow in the classical , even when behind, you can usually find a way to fight on a little longer until something happens in your favor. -just my opinion as usual. -Bill

I am new to chess.com, but play in club OTB (1600, peaked at 1700). Paused 2 years due to work + Covid but now starting to play again!
I exclusively played the Caro-Kann, then switched to the French against 1.e4 up until today.
I want to try out something a bit different here which I might add to my repertoire OTB.
As white, I play everything. Now mainly 1.c4 and 2.g3, but I often switch to 1.e4.
Do you have some tips for one or 2 Sicilian variations to try out the next couple of weeks on chess.com? Maybe the most principled?
I am straightforward at the opening, I look for space and development in order to have a solid middle game where I tend to switch gears and have active piece play whenever I can. I also enjoy overall endgames.
