The exchange variation. I've heard Caro Kann players and French Defense players hate the exchange variations so start the game with a variation that they don't like 😉
Which is the best way to attack the Caro Kann?

The advanced variation is the most challenging but it is also the variation that they will be most prepared for so you need to put some work in to play it.
I have had reasonable success with the Fantasy variation which only requires that you fully understand the reason for f3.

Ah, that makes sense. As a lower (relatively) rated player who not willing to put the time in to learn main line variations I have been told to just exchange in order to get out of book/simplify, but I guess that is perhaps not so effective advice. Do you have any recommendations on where to learn some beginner/intermediate level depth lines and the main ideas which is not too time consuming?

I mean, the thing about opening theory is that you are going to really need to know a lot of replies and the reasons why the good moves are the good moves and the bad moves are the bad moves, and until you are at a highish level it is more helpful to work on tactics and end games. Sure, watch some videos about your selected opening in general, and maybe note if there are any thematic sacrifices in the opening you choose, but tactics, mating patterns, and endgames are what you should concentrate on at your level. And, most importantly, if you want to improve PLAY LONG GAMES AND ANALYSE THEM. Quick play may be less stressful, but it will do little to improve your game. Most importantly, of course (as much as you may be bored of hearing this) have fun! It's a game after all!

If you could send us some aid that'd be great, we have been taken over by a clown and foreign intervention would be appreciated!
I prefer to use the apocalypse attack, and I win the majority of my games just because players fall into a trap. It is an equal game if black plays correctly, and there are no real disadvantages to playing this. (Sorry the analysis is cluttered, let me know if you want to know more about this opening!)
Oh okay, Btw which variation needs the most theory?
If you actually want to learn a lot of theory(for some reason), then learn some of the openings that the others suggested in this thread. If you don't want to learn a ton of theory(yet), then you could definitely play the apocalypse attack with success, especially at your level, since it is targeted towards making caro-kann players step out of their comfort zone to not fall into a trap.

My favourite is the Karpov Variation .
Or playing c4 immediately when they go for e5 (advanced variation)
Someone posted about the apocalypse attack and it looks like fun and should win some games but if black plays 4. ...Nf6 or maybe Qc7, black should be slightly better because the knight e5 move is premature.
Nf6 is a good move against the apocalypse attack, but is no problem for white, for the same reason why Qc7 is no problem. d4 is the best move against both 4...Nf6 and 4...Qc7, often followed up with moves like c3 and Bd3(or at least that is what I play, and the computer thinks it is fine also.
