would anyone recommend the Dutch defence?

The Stonewall is only turgid if you play it badly. I've moved from Leningrad to Stonewall. It's a matter of taste - they're both good defences, but the Leningrad is more complicated and probably higher risk. The main use of the Classical, it seems to me, is to transpose into if conditions are not ideal for a Stonewall, eg when White plays London-style.

There are people who swear by the Dutch. (Not me 😎) But if you play it be prepared to face the Staunton Gambit or the Hopton Attack, which are what I would play as white.
Dutch is playable: it was the favorite of Botvinnik and has also been played by Carlsen.

Dutch is not fully sound, see figure 4 (a).

I normally play Classical Dutch. Though I often throw in ...b6 and/or ...Bb4 if White does not commit to a kingside fianchetto.

I played it for decades, but shifted to QGD when it became clear that once you ran into anyone who was prepared, there was little chance for a decent outcome.

Hi Boar1976. You live in the same land as the Ginger GM who has made some fantastic videos materials on the Dutch defense. Check out his online shop. But if you want to play the Dutch seriously, then I recommend the King's Indian. It is the Dutch but improved because of the strong e5 point. Dutch is considered a bad opening.

The Dutch is refutable but I do take it seriously as it can be tricky to play against (or play with).
I don't know the Staunton Gambit very well but I've heard is is very tricky. Anna Cramling made a video on it and there are other resources to help you out

The Dutch is fine despite of what people say... the only problem is that when it goes wrong, it goes VERY wrong, but when it goes right it goes right it's super fun to play
I mean, if Morphy played it, how can it be wrong?
You can play it against most openings that are not 1.e4 (Reti, English, d4, 1.b3, etc) and chances are you'll be more familiar with the position than your opponent as most people don't often face it... gives you great attacking chances and it can lead to exciting unbalanced sharp tactical positions.
stonewall is the most boring one, it's kinda whack in my opinion but sometimes you just have to transpose into it... classic and leningrad is where it's at
Hopton attack is usually not an issue, just go for the lenigrad... staunton gambit can be tricky but the one that I find most annoying to play against is the raphael variation (improved stauton gambit imo) where white castles long and pawn storms you (and you already have a contact point on f5)

Yes, I've tried a lot of defences: QGD, Tarrasch, Budapest, Slav, but I've settled on the Dutch Stonewall as my favourite. And desopite the comments above, it is not " a bad opening" or "refutable". This is a myth that's very helpful to us Dutch players - I get a lot of wins against players who try to refute it.
