I played this variant at home with my daughter yesterday and I have some feedback on the rules.
As with all "capture the king" variants, I don't think checks should be given special treatment.
If rolling no legal moves allows you to move whatever you want, that should be true for checks also (but then, I'd just treat dice as a drawback variant where you play normal chess and have to win via checkmate). If rolling no legal moves means you skip the turn, that should be true for all turns.
Also, if you're in check and don't roll a defense, skip your turn and your opponent doesn't roll a victory, you're still in check. Meaning you'll be stuck until you roll a defense, giving an enormous advantage to the first player who can play a check. However, if you can make another move on your first turn, you could add a defender to the checked square, increasing your chances of surviving the check on the second turn.
So my proposal is: either use the dice to say "if you roll a valid piece you must use that piece, otherwise it's normal chess" (and play with normal chess rules), or to say "if you don't roll a valid piece you skip" (and checks are ignored and you win by capturing)

Since it's not guaranteed that someone can attack the king, I don't think it's right to force a player to respond to "check". Rather, in this case, let victory be decided by capturing the king.
Likewise, let players castle out of "check", but if the opponent's next roll is for one of the checking pieces, then that's game over.
