I don't understand why this is the case. I really hate that not many people my favorite variants: torpedo, capture anything, and sideway pawn. I think its because there are lots of video of chess streamers playing Fog of War only.

Because they never even heard of those other variants. Are they playable here?
Because "Fog of War" ist non-deterministic, i.e. has hidden information, and therefore you can be sure that your opponent will never be an AB-algorithm like Stockfish. Another option if you don't want to play against Stockfish are multiplayer games like " Four Player Chess".
Of the variants you mentioned, "capture all" is implemented yet in Fairy-Stockfish, and the other two will be in near future, it's only a matter if time
