The Mex2007 set isn't it a regular FIDE German knight set? Forgive if I'm wrong.

Yes C.J, it is based on German Knight chess set, but the Eagles below are definitively Mexican!

Oh, that's a tough task. They might be scattered all over the internet then again perhaps it's impossible to know exactly what type chessmen they used. Although most likely jaques Staunton. I don't think modern photographic camera was invented yet. Not till maybe turn of the century. But I'll see what I can find, because I love this thread
I put Fischer - Spassky 1992, they used a dubrovnik set.
Exceptional!! I love Dubrovniks, I own four of them. The Pawns, I'm in love with those chubby little piglets.
It will be great if someone post more pics of the match showing the chess set
