Playing Against 700-900 ELO Blitz with 80-90% accuracy

I started playing Blitz in recent months and worked my ELO up to 800-900 ( I'm about 1200 ELO in Rapid). When I got to the 700s in Blitz, I started frequently playing against similarly rated players who are playing with over 80, sometimes mid 90s, accuracy with a few seconds of thinking time.
This seems to be the case for both 3min and 5min games. What explains this? It's not like we are playing familiar positions every single game either.
