I do not understand why the point distribution for winning a game is more advantageous towards the lower-ranked player. Ex, if I'm a 1200 level and play against a 1150 player, and they win, they will get much more points than if I win. This make it unfavorable for players seeking rank to play against lower-level players. I was wondering why I kept starting random games with much higher level players and they would disconnect after I made a move. Now I get it. It takes a long time to climb back up playing people of your own rank after losing to a few people below your rank, so now I avoid the risk by only playing my level or above players. It's unfortunate but such is the system now.
Your strategy is wrong. The point distribution is fair. It works out because you are going to win most games against lower ranked players and lose most games against higher rated players.
Your
rating will go up only if you win more than expected.
50 points advantage means you should have a 57% chance of winning or you should wind up with 57 points out of 100 games.
Now here they use a system(Glicko) which looks at winning chances but also looks at how often you have been playing and how wildly your rating varies. It gives each players rating a statistical assessment of how close it is to his or her "true" rating. It is called RD or rating deviation. So that causes variation too.

Your RD of 22 is low. That means your 1200 rating is pretty accurate. (And your rating has stayed around 1200 for the last year.)
But 1200 is also the rating for most brand new players here. Their RD might be 400. Their ratings will change much faster than yours.
