Can somebody explain the logic behind the fact every time you move in Blitz you get more time - where is the logic in having a timer if every time you move it goes up

It actually makes a great deal of sense to have an increment, but I think you may be a little confused as to how it works.  The timer still counts down while it's your turn; the increment just gives you a little extra time during the opening phase and allows an interesting end game to continue when low on time (living off the increment).  I'll find the article for you...

It doesn't make any sense to me a 5minute game should be a 5minute game not 5minutes and however long it takes to checkmate 😄

You played an increment game. You probably played a 3I2 or 5I5 game or something. Play 3I0 or 5I0.

No i dont i play 5minute blitz and it goes up and its annoying as hell

Have you enabled Premoves? If not, you probably should enable them in Live Chess under Settings.

    I think the logic is that players need to move quickly in a fast time control, but hopefully they won't lose on time.  If there is no time increment, then more players will lose on time.
