Castling: what is the better pawn structure to hide behind

Please look at the pawn structure in the picture. Let's say I want or have to castle out of the middle, what would be the preferable pawn structure to hide behind? I know....it is best to castle behind three pawns that have not been moved. But where to castle in this situation?

You can't judge it on this position - it depends where the Black pieces are.

Yeah. It depends on the other pieces and pawns. There are weak pawns on the b and f file that may need looking after if they are vulnerable and cant be advanced. Or you may want to position the king in the side that favours an end game. Do you have a pawn majority or passed pawn that you want the king to support, for example? Is your opponent threatening a pawn storm on one side, maybe with the advantage of time, pawns already advanced. No point castling into an attack.

I don't want to post it as long as I am still playing. That wouldn't be fair. But nothing has really been traded yet. He is one pawn down and I lost my dark bishop. Still early in the game. I don't have to castle but have no other good moves right now, so I thought I could castle. but since pawns on both sides moved I am kinda unsure in what direction.

if the dark square bishops are gone I would probably castle short and put my light square bishop on g2 to prevent light square infiltration
