I'm new to chess. Which online game variant should I start with?

Yes, it does matter actually. If you are new and still learning, standard 10 minutes (Rapid) is the way to go. Because you will have time to think the next move while the clock is still an important factor. As opposed to Blitz, the time available is much less that you don't have much time to think, which could make you do an incorrect move. Either way, the more games you play, the better you gets. And by doing so, Rapid is much recommended. That's from what I heard though.

As a beginner in chess, it's advisable to start with longer time controls like Rapid or Daily games. These variants allow you more time to think about your moves, analyze positions, and learn from your games. Blitz and Bullet games, with their faster time controls, can be challenging for beginners as they require quicker decision-making. Once you gain more experience and confidence, you can explore faster variants. Remember, the key is to enjoy the learning process and gradually increase the pace as you become more comfortable. I would recommend just playing chess for now until you're confident you have the rules down. After that 30/30 so you can engage system 2 thinking. 10 mins or less relies upon system 1 thinking which is based in instinct. Instincts your internalised during system 2 thinking. Notice how when you first learned to ride a bike, you had to focus on everything from where your body was placed, to how to peddle, turn the bars etc. But over time you internalised that and can now cycle without thinking.

10 or 30 mins. Later you can try Chess960😀😀, but it is random so it might be favorable in a game but not so much in another. The key is consistency.🤗🤗

You should play every time format, like 3,5,10 minutes for longer time control you may join local tournaments.
Play 15|10 rapid. It is the official rapid time control like for the World Championship etc.
Thanks to the increment you can always win a won position or draw a drawn position.

Don't play variants as a beginner. Play standard, 10/0 (rapid) chess.
