Opponent Resign during Long Game

Yesterday I have played several 60 mins games, all ending up with opponent resignation. Now my score is falsely high. I had an opponent before, both of us spent about 50 mins in the game and we got a draw, it was taking forever but still fun. Am I taking too long so that they just all got impatient? Should I keep doing versus AI until I can think quick enough?

How would anyone know? If your win streak pushed your rating too high, you might lose a few games.  You might keep winning.

Who knows?

It's fine. It happens. You'll benefit from the challenge of playing higher rated players. I doubt you are taking too long, if someone is playing G60 it's because they enjoy long games.
