What famous chess games are recommended to study for beginners?

There are alot of chess games that Grandmasters and other people study in order to improve at chess Especially with the notable game of Paul Morphy 'The Opera Game' 

However besides the 'Opera Game' are there anymore chess openings that one can study to improve specifically 600-1000 elo?

I would not study grandmaster games at an elo under 1500, because you probably won't understand what they are doing meaning you won't learn anything. Some chess openings I would study at your level are king/queen gambit, Italian, and beginner gambits like Blackburn-shilling and Englund gambit.

The openings of GM games very useful for demonstrating the importance of prophylactic moves during the opening which is something I used to be cavalier about.

Logical Chess Move By Move by Irving Chernev...

Both books follow the same formula. That is, to explain the chess principles, strategies and reasoning behind each move. The games are chosen for their instructive value. The books are outstanding for their intended purpose and are targeted to the improving chess amateur, primarily the beginner-novice player.
