I was wondering this because I just decided that I might check them out, but then realised I had no idea what they were at all? Are there daily tournaments that you can do because all the ones I have seen have been blitz and bullet etc?

Yes, there are TONS of Daily Tournaments happening all the time.  Check them out here: https://www.chess.com/tournaments/all

And how will I know when to play?

Max timeout is a restriction to prevent people from entering who regularly timeout in their daily games.  The tournament will either begin on a "Start Date" listed or when enough entrants have entered.

I suggest also giving this official Support Article a quick glance; it will give some extra information on some of the terms used: https://support.chess.com/article/444-how-do-chesscom-daily-tournaments-work

For a beginner a tournament is an opportunity to play  either against players in a ratings band - eg 1000 - 1200  or  an "open"  tournament  were you can lock horns with much stronger players even titled players .
