Yeah, but there's something I find fitting about the idea of Bishops being able to perform "conversions". At the risk of adding too much complexity, perhaps two Bishops should be able to convert an opposing King if he does not move away from their influence and no opposing Bishop is also adjacent to him (winning the game).

Victory if your king reaches the opposite king's starting postition.
A funny rule. I actually think its application would be so rare that we need a really large number of games before it ever becomes relevant though :P.

Once per game you can remove one of your opponent's pawns from the chessboard. The removed pawn is regarded as captured. Do this on your turn in place of a regular move.
(I stole this from the game Knightmare Chess, which provides a whole set of "special" chess moves/abilities.)

Move a bishop to a vacant square on the same rank of an adjacent file. Usable only once in the game. Cannot be used to block a check or if the move would put your own king in check (of course).
For example: 1. Nf3 d5 2. Bg8, with white's light square bishop now becoming a dark square bishop.
This move could turn bad bishops into good bishops or completely change the value of an endgame. I think it would greatly increase the value of the bishop and completely change some openings. It would be an interesting chess variant!
INVENT A SPECIAL MOVE!
YOu know how castling could be called a special move? Well i'd like to hear your suggestions for use - only - once moves. They can be outrageous too. For example I have one:
