Definitely don't let them win.
I would do unrated because the goal is learning the material, not comepetitiveness. With unrated, you can do things for demonstrative purposes that you would not do if the games were rated.

Sorry but I have to ask, what makes you think you're qualified for coaching? Your rating suggests you are barely past the beginner stage yourself.

I have heard from other coaches that you play to win, but it should be unrated. THe main reason being you are instructing throughout, it is not as if you are actually playing a game -- the purpose is on-going training. Also, this allows them to learn, without discouraging them as they see their rating fall. They can play rated games with more closely rated opponents were the goal is NOT to be instructed.

2) Rated or unrated? (I play rated to see their rating-achievement)
