London system vs e5

Hi, i am playing london system as a white and sometime i have a situation when my opponent play e5 as a first move. What should I do, take that pawn or somehow defend it ? I would be greatfull if someone will explein me the best move for that situation. I am new to chess ( 600 points). Thanks !
Just take, 1 d4 e5 (The Englund Gambit) is just a free pawn. Your opponent will probably eventually get the pawn back but just develop normally and castle and you'll be fine.
