I reached this position against a lower rated player, and was worried about being the exchange down. I found a nice draw, but afterwards I thought my position was not that bad, maybe I panicked for no reason. Could I have won?

Looks like a draw is your best bet to me. The rook pair is much stronger than the knight and rook if you don't go for a draw.

e6 with the idea of Qe5 looks stronger Joe or just keep pushing the e-pawn and threaten to queen of f8. Yes it is a won position for white, the restriction of the enemy king would be the key, could you have lost? With really hard play you might have been able to lose, only you can answer that one bro.

In my opinion, the start position is a complete draw. Playing e6 would only have resulted in white hanging a pawn and ending up losing.
