This happened in a recent game and im just wondering ¿why my c3 pawn can't take the knight? im really new to chess but i thought my pawn was a legal move, what i'm not seeing?

You would be in check

Specifically, you would be discovering check from the a5 bishop.   Putting yourself in check is not allowed, so the c3 pawn is not allowed to move:  it is "pinned" by the a5 bishop.

You are allowed to take the knight some other way: Qxd4 would be a good move here.  You might also consider Pb4, which both unpins your c3 pawn and attacks the a5 bishop.
