Why not 6. bxc3? More pawns in the center usually is good. Plus, you can still castle.
With the c3 pawn covering b4 and d4, the king is pretty safe in the opening without having to castle. Take a look at this line of the KID:
Yes, but in the KID variation black has no choice as to whether he gets to castle. In that variation, c6 is played to cover key squares and protect the king.
However, in your game, taking with the b pawn still covers both squares and supports the d4 push. Again, you will still be able to castle.
