2. RWBY
This was made by Monty Oum so you know it's good. So many awesome fight scenes and a killer soundtrack.
3. Sword Art Online
This one probably need no explanation.

Anime is not so interesting to me anymore, but you can do things like go on youtube to look for people's top 10 ______
A blank you can fill in with "of 2018" for example.
And if you find an anime you really like, look at the creator and studio, then look for other stuff they've done.

Yeah, especially if you're a little older, it might be useful to know the genres. Shounen is targeted at kids (more specifically male children) and seinen is targeted at young adults / adults. They have more mature themes / plots. For example it might explore what is consciousness or deal with assisted suicide. Or even if it's just straight action adventure, the relationships, plot, setting (etc) will be more realistic.
