Perhaps begin wth Starting Out: The Sicilian by GM John Emms (2009).

The Starting Out books are well designed. However, the best book on the Sicilian is a good database, such as Chess Informant's Paramount. Most essential Sicilian theory can be found in Paramount.

I played the Sicilian as my main response to 1.e4 from the 1970s until 2003, when I switched to the French. I do have a couple of books on the Sicilian (some new).
