I came with the same question. I'd like to play more Chess 960, but it takes surprisingly long to be paired for a game. After digging around just now, I think the answer is to avoid increment. Check out the stats in this oldish Chess.com article on time controls. It shows WAY more people play without increment than with. I had no idea. Also, check out the Chess.com tournament schedule, which only offers Chess960 in two time controls: 10|0 and 3|0. I'd love to see actual stats on the most popular time controls for Chess 960, but for now I guess I'll just avoid increment.

3+0 is most common. but I like 10+0 and also never wait longer than 5 mins to get paired. there is also a 10+0 960 tournament every 4 hours

10+0 for 960 still seems really brief, especially without increment. If you analyze the starting position you're already in a time hole. Then your opponent can blitz out the same move and probably be close to even.
The whole point of 960 is you need to analyze the board and create your own opening. That takes time. Sure, one can blitz out moves on instinct, but the format is more suited to having some time to think.
I just played a 15+10 960 game. Yesterday I tried on the pool and couldn't find anyone. Today I did. So the games exist, but they're not common.
It's understandable but unfortunate that all live time controls in 960 are assigned to the same Elo. I'm much stronger generally at slower time controls.

In the chess com app they only give you the "daily" time preset for 960 so it seems like you have to choose a custom time control. Thanks everyone!
