As far as my technique goes. Trust your intuition, and be hyperaware of every idea that the engine could possibly be thinking of. Don't let it get a positional advantage, otherwise there's a good chance you've already lost.

I've never personally beaten stockfish (not from lack of trying), but I know that some opening traps and similar things can trick it on rare occasions. Here's an example (keep in mind that this is lichess stockfish level 8): https://www.youtube.com/watch?v=FC2P6VUYu78

But all jokes aside, great job! The trick is to close the position so it will spend too much time thinking. In certain positions you can just move pieces bad and forth. 'Stockfish' had quite a low bullet rating on live chess iirc, possibly even U2000.
