Yes, they should make all beginning players learn all the basic movement rules first. Else, they will experience it the hard way like what you faced in the game.

En passant does not depend on the number of pieces on the board - it depends on the last move played (only valid by moving a White pawn two squares to the fourth rank or a Black pawn two squares to the fifth rank).
