How can I beat my computer chess game?

I want to beat my Safari computer chess game.  It has 10 settings.  1,2,3 moves ahead or seven time settings 1sec-256sec.  I have only beaten it a couple, maybe three times.  I play the computer here and have won against up to maybe 1600.  My rating is above 1100.  The 5min game is too fast for me. I haven't memorized a whole lot of openings.

The Safari game beats me on every level.  My rating on it would be wherever ratings start 100, 200?  It destroys any opening I use.  Playing the black is even worse.  It's like the white queen starts on my back rank.

So, what's the deal?  How good of a rating do I need here to consistently beat the computer that loves to say "Check Mate" in about 60 different languages.
