How do you beat really defensive players?

Defensive players tend to end up with a passive position. Keep the pressure up and they will eventually be forced to make a bad move.

Stay flexible (don't push your pawns as fast and far as possible).
Stay patient (don't try to immediately punish them).
Don't be afraid to avoid even trades. Especially when they have less space, trades will alleviate their burden.
In general build up pressure on a point, and after they're forced to defend, take advantage of the downside of that defense. For example if you force them to move a pawn, try to use the squares the pawn is no longer defending. If they had to bring extra pieces to the kingside, then start building up on the queenside.

If they are defensive players than you know already that they are making mistakes. In general you should slowly build up your position until you see the way to smash your opponent.

if they play defensive, then you have to slowly improve your piece positioning, and keep improving your position until you see an oportunity. Chances are your opponent is waiting for you to make a mistake, or try too hard to attack or open the position

I've actually done stuff like this during unrated anon games. They're taking 10 seconds per move in a 3 minute game from the opening... obviously nothing I play matters because they're going to lose on time. So what to do? Sac material until they speed up lol. It actually works.
