it's really easy, show her your set, start a bonfire in your back garden, throw your set into it and give her a bunch of flowers.
At dinner as you are sipping wine and staring into each other's eyes, casually mention that she's so intriguing and beautiful that she throws you off balance, much like the unbalanced nature of a Sicilian defense response to e4. She'll scoot closer. Then seal the deal by going into all of the variations in excruciating detail so she knows you know your stuff. Make sure you have plenty of condoms. You'll need them.

You will not surprise her with that.
Chess is not attractive for the vast majority of people in the world. It is considered like just a board game (And it actually is) and she won't care about it.
If you talk too much about chess then she will think that you are obsessed with a simple game and you will actually lose points.
You can just mention it randomly as one of the things you like to do, but no more than that.
Unless she is an avid chess player herself, she will not consider attractive that you play chess.
