Dan Heisman. I feel like he'd just emanate chess wisdom regarding improvement and common sense in any conversation.
That's the impression I got when he gave me a free improvement consultation over the phone.
Considering that anyone who is a NM or higher could tell me more than I'd comprehend about chess over dinner, I'd rather go with someone who is a good conversationalist in general and also has interest in other subjects I like: politics, music, sports, etc.
Off the top of my head, Kasparov would be a good choice.
Then again, does Jessica Alba play chess?

i'd echo piperose --- boris spassky seems like a true gentlemen, he'd have RJF tales. and korchnoi - imagine playing - i think it was karpov? - for the world championship and he's a defector but the commies (sorry, no offense) are holding his son hostage and i believe falsely imprisoned him... but, maybe korchnoi is no fun.... botvinnik seems well educated (an engineer by training) and everything.... but, maybe russians are no fun (as evidenced by our american film and cartoon industry)............
I'd go with Caruana. And it wouldn't be a boring dinner, I'd take him to strip club for drinks and visual fun. He seems like kind of guy who could use all that, someone to take him out of his 64-square world and show him an entertaining night. Then we'd end up somewhere half drunk at a 24hr diner for breakfast at 6 in the morning. So you see, I'd be doing him a privilege by him hanging out with me.
I most certainly imagine most of you taking him to dinner and asking him boring chess questions or things about his Italian heritage. Man, you guys are the worst.
